Stop at 60 ml and you have phin strength. Short, dark, and ready for condensed milk and ice — which means cà phê sữa đá travels too. Keep pouring for a longer cup: 150 ml strong and black, 200 ml the house pour, 250 ml gentler. Unlike a pod, you are still the one brewing.

  2. 0:00 Shake lightly to level the grounds, then hook the hangers over the rim of your mug.
  3. 0:00 Wet the bed with about 40 ml and let it bloom. 1 min 30 sec
  4. 1:30 Top up in stages — the filter only holds so much. Pour, let it draw down, pour again. 1 min 30 sec
  5. 3:00 Stop at 60 ml and you have phin strength: short, dark, and ready for condensed milk and ice. Carry on to 150 ml for a strong black cup, 200 ml for the house pour, or 250 ml for something longer and gentler.
  6. 3:00 Lift the filter out and discard it. Drink.
